Goats thrive under even worse conditions that sheep, so are the favord
meat for people from rugged terrain.
- Jews are free to eat goat provided it has been ritually
slaughtered. In the religion's land of origin, the Near East, lamb
dominates dominates but goat is also used.
- Islam adopted most of it's dietary law from Judaism, and
is also predominantly a religion of less fertile regions. Goat shares
the plate with lamb.
- India: Goat is the dominant meat of India, but recipes can
deceive you because during the Raj the British were pleased to call goat
"mutton" to make it taste more like home.
- Mexico: Much of the expanded demand for goat in the Southwest
comes from the growing Latino population. Goat is important in Mexico
because of the often infertile land and poverty of the rural population.
- Christians, largely recruited from the Pagans, rejected the
religious prohibitions of Judaism and eat whatever is economical in the
region. In the Near East and other less fertile areas that will be goat
and sheep.
