Beans, Peas and Lentils belong to a huge plant family called Legumes, which range from small herb like plants to large trees. Many are toxic and many are edible, but all grow their seeds in pods (though the pod may, in some cases, contain as few as one seed).

"Pulse" is the collective term for the edible seeds of beans, peas and lentils. In culinary terminology, "legume" would refer to the whole pod, as in string beans.





Varieties
  • Almond - basically the seed of a peach with no flesh, the almond (as with peach and apricot seeds) gets its distinctive flavor from cyanide, and that's why we can't get strongly flavored almonds in the U.S. - our Food and Drug Administration doesn't trust us not to poison ourselves.
  • Coconut - A major source of cooking oil as well as a source of food and flavoring in the tropics.
