Potato Tzatziki Salad

Do Ahead   -   (25 min)
  1. Make Tzatziki (up to a day ahead).
Make   -   (2 hrs - 45 min work)
  1. Prepare POTATOES;   For tiny Dutch Yellow - nothing. For very small Red Potatoes - nothing. For larger potatoes - peel and cut into cubes about 1/2 to 3/4 inch.
  2. Place Potatoes in a sauce pan with Cold Water to cover. Bring to a boil and simmer until Potatoes are just done through - in most cases about 20 minutes from turning on the burner. Cool well.
  3. Slice Olives. Slice extras for Garnish.
  4. Chop Dill for Garnish.
  5. Cut cooked Potatoes as needed. Tiny Dutch Yellow in half. Very small Red in quarters, or however works.
  6. Mix All Items (except Garnish) and chill for an hour or two if you have time.
  7. Serve chilled, garnished with Dill and sliced Kalamata Olives.
NOTES:
  1. Potatoes:

      The photo example was made with tiny Dutch Yellow potatoes. Second choice would be Red Potatoes (the smaller the better). Beyond that you'll need boiling type potatoes peeled and cubed before cooking. For details see our Potatoes page.
  2. Tzatziki

  3. Comments

      Not one of my 11 Greek cookbooks has anything even suggesting something like this salad. I find no recipe on the Internet by anyone who seems even remotely Greek, and the Tzatziki part varies a lot, so I'm presuming this is an American salad. I have, however, added some Kalamata Olives to make it a little more Greek, and I've posted it also under Greece, in case any Greeks have a different opinion.
  4. Options:

      Some recipe replace 2 Tablespoons of the Yogurt with 2 Tablespoons of Sour Cream to make the dressing richer. For California Style, cap and core a Jalapeño Chili, cut it into very tiny dice, and stir it in.
  5. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
