Jackfruit Rag Pancakes

Many sources call call jackfruit rags "inedible", but this is not at all true, as these pancakes will show. They will be fairly sweet, so I recommend serving with Sour Cream, or if you don't want dairy (or the extra calories) a squeeze of Lemon Juice works just fine.

Potato Starch (2)

Lard or Butter

  1. Make sure RAGS are separated into strands, cutting the base from any clumps. Steam them for 15 minutes to cook tender, drain and cool.
  2. Mix together Rags, Egg, Starch and Salt. Let sit for a few minutes.
  3. Heat just enough Lard for frying in a well seasoned iron skillet and spoon in 1/4 of the Rag mix. Form into a fairly thin pancake. Fry slowly so it cooks through, flipping when the first side is nicely browned.
  4. Serve warm with Sour Cream or a squeeze of Lemon Juice.
NOTES:
  1. Jackfruit Rags:   These are cut from the rind after the yellow fruit arils and seeds have been removed. For details see my Jackfruit Page.
  2. Potato Starch:   Potato starch is what I use but rice flour or wheat flour should also work fine.
  3. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch
