Spaghetti Squash Side Dish

A very simple but interesting vegetable side dish, easy to make and vegetarian, but not vegan. It can be reheated in the oven at around 350°F, but keep the time short so the strands stay firm.

Spaghetti Squash (1)  
Olive Oil ExtV
Salt
Herb (2)
-- Dressing
Butter
Lemon Juice
Salt
Pepper
-- Garnish
Parmesan Cheese

Make   -   (1-1/4 hr - 25 min work)
  1. Preheat Oven to 400°F/200°C.
  2. Cut SQUASH in half. Most cut lengthwise, but crosswise will work too. Scrape out seed mass with a spoon, or better with a sharp tool such as a butter curler.
  3. Brush cut side and inside with Olive Oil, then give a light sprinkle of salt - not to much of either or the strands will be too soft.
  4. Place Squash cut side down on foil. Place in the hot oven and let roast for 45 min - an hour is too long, you want the strands to still have some crunch.
  5. Meanwhile:   Chop HERB fairly small.
  6. In a small pan, mix all Dressing items.
  7. Grate CHEESE for Garnish.
  8. When Squash is done, turn on the heat under Dressing and bring it just to a light simmer.
  9. With a fork, fluff the Squash flesh into strands and scrape them from the shell.
  10. Place Squash strands in a mixing bowl. Pour Dressing over and fluff with a fork or chopsticks. Mix in Herb and fluff the same way.
  11. Place into serving dishes and garnish with Grated Cheese. Serve warm.
NOTES:
  1. Spaghetti Squash:

      This squash is quite popular here in Southern California, and can probably be found in most of North America, a it ships well. For details see our Spaghetti Squash page.
  2. Herb:

      The photo example was made with Dill, but other fresh herbs of your choice can be used. If you use a very strong herb, like Sage or Rosemary, cut the amount in half. I don't use Basil because it will immediately turn black due to the Lemon Juice.
