Fava Bean & Cheese Salad

Fava beans (Broad Beans) are very popular in Peru. This is a good party salad, as it won't wilt on you. For the "official" version see Salterito.

Potatoes (1)
Fava Beans (2)
Corn Kernels (3)
Queso Fresco (4)
Chili Pepper (5)
Vinegar, White Wine  
Olive Oil ExtV

Do Ahead   -   (depends)
  1. Boil POTATOES in their skins until just done. Chill well for slicing.
  2. IF using fresh FAVA BEANS, shell them and cook in salted water until tender. Pop them out of their skins.
  3. IF using fresh CORN, drop the cob into boiling water and boil 2 minutes from the time the water returns to a boil. Cool and shave the kernels off the cob.
Make Salad   -   (25 min)
  1. Skin Potatoes and cut into 1/2 inch dice.
  2. If frozen FAVA BEANS, par boil in salted water until they return to a boil over high heat. Drain and cool. If single peeled, you'll have to pop them out of their skins.
  3. If frozen CORN, thaw. If Canned CORN, drain.
  4. Dice QUESO FRESCO 1/2 inch.
  5. Core and seed CHILI and chop fine.
  6. Tumble All items together.
  7. Let rest an hour or two for flavors to blend. Serve cool.
NOTES:
  1. Potatoes:

      White Rose are fine for this use, but "Yukon Gold" type can also be used if you avoid overcooking them. Choose potatoes of small size as large ones tend to split in slicing. For details see our Potatoes page.
  2. Fava Beans:

      In Peru they would use fresh fava beans so young the beans would not need to have their skins removed. These are not much available in North America. For the recipe I used frozen "double peeled" fava beans. For details see our Fava Beans page.
  3. Corn Kernels:

      These can be fresh, frozen or canned.
  4. Queso Fresco:

      This is a soft white cheese available in disk shaped packages in any market serving a Mexican, Central or South America community. Any plain soft white Queso Fresco can be used.
  5. Chili:

      Any red or green medium size chili of medium hotness can be used. I used a red ripe Fresno in this recipe. For details see our Chilis page.
