An important recipe ingredient that's also an important table condiment. If Onions are used instead of Scallions, it's called Guiso. See also Comments.

Prep   -   (25 min)
  1. Scald TOMATOES 1 minute in boiling water, quench in cold water, then peel and dice medium. See also Tomatoes.
  2. Slice Scallions crosswise 1/8 inch. Measure is after chopping, lightly packed.
  3. Crush GARLIC and chop fine. Add to Scallions.
  4. Grind Cumin and add to Scallions.
Prep   -   (25 min)
  1. In a sauté pan or similar heat Oil and stir in Scallion mix for about 3 minutes.
  2. Stir in Tomatoes, bring to a boil, then turn heat down and cook covered, stirring now and then, for about 10 minutes or until softened.
  3. Stir in Salt, Pepper, and any Options used. Turn to low heat and cook uncovered, stirring occasionally, another 10 minutes or until it is not runny. How "not runny" depends on your use, but it should not be more liquid than shown in the photo.
  4. Check seasoning. Serve in a bowl as a table condiment, or hold for use in recipes.
NOTES:
  1. Chili Powder:

      Colombian cooking is generally "chili free", but chilis are used in table condiments. If this Hogao is used as a condiment, feel free to spice it up a little.
  2. Bouillon:

      Chicken bouillon is generally specified. Most recipes don't include this and it may be a regional thing.
  3. Tomatoes:

      Recipes don't call for peeling tomatoes, but some photos look like they've been peeled, and I prefer the peeled texture when cooked, especially if using Plum Tomatoes, which have a high skin to flesh ratio.
  4. Comments:

      One of the premier condiment uses of Hogao is as a topping for Patacones. It's also used as an ingredient in Huevos Pericos (Scrambled Eggs), and as a topping for Arepas or on Toasted Bread. It also serves as "sofrito", a base for many soups and stews. Note that recipes vary a little depending on region of Colombia.
