A dish from Rio de Janeiro, so famous there's a Carmen Miranda song about it. It's simple, but offers an enjoyable set of flavors and textures. See Comments for variations.

Shrimp

This recipe can be done ahead through cooking the Chayotes. Stir in the Shrimp and herbs upon reheating.

Prep   -   (35 min - exclusive of shelling shrimp)
  1. Shell SHRIMP and de-vein as needed.
  2. Crush GARLIC and chop fine. Squeeze LIME JUICE. Mix all Marinade items.
  3. Massage Marinade into Shrimp. Set aside for 30 minutes or so.
  4. Scald TOMATOES one minute in boiling water. Quench in cold water and peel. Chop fine.
  5. Chop ONION fine.
  6. Peel CHAYOTES and cut into cubes about 3/4 inch on a side.
  7. Chop PARSLEY small. Chop SCALLIONS small. Mix.
Run   -   (50 min)
  1. Drain Shrimp
  2. In a spacious sauté pan, heat 2 T Oil. Stir in Shrimp and fry stirring just until Shrimp has completely turned color. Remove from the pan and set aside.
  3. Add 2 T more Oil to the pan. Stir in Onions and fry stirring until translucent. Stir in Tomatoes and fry, stirring until all liquid has evaporated.
  4. Stir in Chayotes and Water. Bring to a boil, then cover and simmer until Chayotes are tender, about 15 to 30 minutes depending on cut and variety.
  5. Stir Shrimp back into the pan along with Parsley mix. Stir until all is heated through.
  6. Season with Salt and serve hot, with plenty of steamed Jasmine rice.
NOTES:
  1. Chayote:

      Prep time is for the usual light green Chayotes commonly found in North American markets. If you have the big prickly ones, you'll need a little more time and a few more ounces. For details see our Chayotes page.
  2. Comments

      Some cut the Chayotes differently, it's up to you. If you want more broth consider using Shrimp Shell Broth instead of water, or some other broth, and increase the amount of Tomatoes. Some recipes that want more liquid add 1/2 cup of Coconut Milk.
