Corn & Vegetable Soup

What? A vegetarian dish from Argentina? Yes, and from a Spanish language Argentine cookbook published in Argentina. It's also pretty good eating, for light lunch or soup course.

Prep   -   (30 min )
  1. Strip Kernels from CORN COBS (or open cans and drain).
  2. Peel and seed SQUASH and cut into about 1/2 inch dice.
  3. Peel POTATOES and cut into about 1/2 inch dice. Hold in cold water until needed.
  4. Peel CARROTS and cut into chunks of similar size to the Squash.
  5. Chop ONIONS small.
  6. Chop PARSLEY small for Garnish.
Run   -   (55 min)
  1. In a suitable heavy bottom pan, 3-1/2 quart minimum, heat Olive Oil and fry Onions, stirring until translucent.
  2. Drain Potatoes and stir in, along with Squash, Carrots, and Corn. Fry stirring for about 3 minutes.
  3. Pour in Water, bring to a boil, cover and simmer until Vegetables are tender, about 30 minutes.
  4. Check Liquid. Season with Salt and Pepper.
  5. Serve hot garnished with Parsley
NOTES:
  1. Corn:

      [Maize; Choclos (Spanish)]   The pattern recipe called for stripping the kernels from 6 whole cobs of corn. The photo example was made with two 15 oz cans of Canned Whole Kernel Corn.
  2. Squash:

      I used a chunk of Kabocha left from another recipe, but Acorn, Buttercup, or other hard winter squash will work fine. For details see our Squash page.
  3. Potatoes:

      White Rose type Potatoes work fine for recipes of this type. Avoid Klondike Gold type as they will disintegrate to mush beyond the minimum cooking time. For details see our Potatoes page.
  4. Broth:

      The pattern recipe called for Water, but, if you desire, a light stock, vegetable or chicken, could be used - or a dash of Vegeta® or Chicken Powder.
  5. Comments:

      The pattern recipe called for 1/2 cup of Oil. I cut that back to 1/4 cup for this recipe, and that's plenty.
  6. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
