Potato & Kale Soup

This popular (and delicious) soup is often served with corn bread on the side. It can be made vegetarian by omitting the Linguiça and using vegetable stock.

Prep   -   (45 min )
  1. Remove stems from KALE and cut into narrow strips. If making quite a bit ahead, cut the Kale near serving time.
  2. Peel POTATOES and cut into about 1 inch cubes. Hold in cold water until needed.
  3. Cut LINGUIÇA into about 3/8 inch disks. This is easiest if the sausage is nearly frozen.
  4. Chop ONION small. Crush GARLIC and chop fine. Mix.
  5. Chop PARSLEY small.
Run   -   (1-1/4 hr)
  1. In a 3 quart sauce pan, heat Olive Oil and fry Linguiça, stirring until lightly browned. Remove and set aside.
  2. Stir Onion mix into the oil and fry stirring until translucent.
  3. Stir in Potatoes and fry, tumbling often, for about 3 minutes.
  4. Pour in Stock, bring to a boil, cover and simmer until Potatoes are soft, about 20 minutes.
  5. With a slotted spoon, remove Potatoes. Set aside about 1 potato worth of chunks that are about 1/2 to 3/4 inch on a side. Pass the rest through a Potato Ricer. Stir both back into the soup.
  6. Stir in Linguiça and Parsley. Bring to a boil and simmer about 5 minutes. Season with Salt and Pepper.
  7. Near serving time, bring soup back to a simmer and stir in Kale. Simmer another 5 minutes.
  8. Serve hot.
NOTES:
  1. Kale:

      The photo example was made with Curly Kale, but Tuscan or Red Russian could be used just as well. For details see our Kale page.
  2. Potatoes:

      The recipe calls for White Potatoes. I used White Rose and they worked very well. For details see our Potatoes page.
  3. Linguiça :

      Brazil has a couple of sausages called "Linguiça, but Linguiça Calabresa is not the one to use. If you can't find the the other one, use Portuguese Linguiça, pretty much the same thing. For details see our Sausages page.
  4. Stock:

      Normally Chicken stock is used, but Vegetable stock can be used.
  5. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
