This simple but very flavorful salad is best served in individual bowls because it needs a little "arrangement". If you just toss it, all the radishes head straight to the bottom of the bowl.

Watercress
Radishes
-- Dressing
Garlic
Parsley
Lemon Juice
Olive Oil, ExtV
Dijon Mustard
Salt
Pepper

Prep   -   (25 min)
  1. Tear WATERCRESS into medium size pieces, discarding large stems. Pour into the mixing bowl.
  2. Slice RADISHES very thin and mix with the Watercress.
  3. Pound GARLIC to paste in a mortar. Chop PARSLEY very fine, mix together All Dressing Items.
  4. Fold Dressing into the salad just before serving.
  5. Carefully arrange the salad in individual bowls, seeing that the radishs don't fall to the bottom. Obviously, this salad is for table service, not buffet service.
