This intensely flavorful stew is easy to make and very satisfying. It does depend a lot on the smoked paprika (you can go as high as 2 T) so don't substitute. This dish reheats very well.

PREP   -   (40 min)
  1. Cut PORK into about 3/4 inch dice.
  2. Peel CARROTS and cut into 1/2 inch dice. Chop ONION fine. Dice BELL PEPPER fine (see Note-2 ). Dice ROASTED PEPPERS fine. Mix all.
  3. Peel GARLIC and slice thin.
  4. Chop TOMATOES small and return to their juice.
RUN   -   (55 min)
  1. In a sauté pan, heat Oil and fry Pork, tumbling often until lightly browned, taking care the fond adhering to the pan is not burned. Remove, leaving oil, and set aside.
  2. Stir Vegetable mix into the pan and fry stirring until Onions are translucent.
  3. Stir in Garlic and fry stirring for another 2 minutes.
  4. Stir in Tomatoes, Bay Leaves and Wine. Bring to a boil.
  5. Stir in Pork and Paprika and bring back to a boil. Season with Salt and Pepper. Cover and simmer 20 minutes (a little more won't hurt).
  6. Serve hot, with Rice, Mashed Potatoes or bread to sop up the juices.
NOTES:
  1. Pork:

      Weight is boneless with excess fat removed. Any normal meaty cuts are fine, but not hearts or cheeks, which are very tough.
  2. Bell Peppers:

      The recipe doesn't call for it, and the peppers are diced fine, but I will probably reheat at least part of the recipe, and don't want even tiny loose skins in it. I blast it black with my Kitchen Torch and brush the skins off under running water. With the torch it takes only a couple of minutes.
  3. Roasted Red Peppers:

      Jars of flame roasted peppers can be found in the pickles section of most markets. These days they are often from Bulgaria, which is fine.
  4. Red Wine:

      A Pinot Noir, Petite Sarah, or similar will work fine.
  5. Smoked Paprika:

      This is a Spanish specialty which can be ordered on-line. Some local emporiums may have it in some regions.
  6. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
