This tasty side dish or brunch recipe is excellent for using up the rest of the Kabocha that was way too big for a recipe.

Prep   -   (25 min)
These Pumpkin steps should be done by the strongest person in the household.
  1. Split PUMPKIN top to bottom - a sharp Chinese cleaver knife driven by a soft faced mallet is good for this. Scrape out the seed mass with a tablespoon.
  2. Peel Pumpkin. A sharp "Y" vegetable peeler is best, and it peels easiest going around rather than top to bottom. Cut into about 3/4 inch chunks.
  3. Chop LEMON ZEST fine - 3 square inches with no white.
Sauce   -   (15 min)
  1. Peel GARLIC. Cut crusts from BREAD and cut or tear into small pieces.
  2. In a spacious (3 quart is good), coverable sauté pan, heat 2 T of Olive Oil over moderate heat. Fry Garlic and Bread until lightly browned. Tumble the bread immediately so there will be oil on both sides. Remove from the pan.
  3. Place all Sauce items in a Blender, Processor, or Mixie and run to a paste. Hold until needed.
Finish   -   (25 min)
  1. Add 1 T more Olive Oil to the pan and reheat it over medium heat. Stir in Pumpkin chunks and fry stirring for about 2 minutes.
  2. Stir in Lemon Zest and Salt. Turn the heat to low, cover, and let Pumpkin steam in its own juices for about 10 minutes. Tumble around a couple of times.
  3. Stir in Sauce and 1/2 cup Water. Cook covered over medium heat another 5 minutes, tumbling now and then.
  4. Serve warm.
NOTES:
  1. Pumpkin:

      NOT the orange Halloween kind, which is watery. Even Libby's market dominating canned 100% Pumpkin pie filling is made from an elongated tan squash. "Pumpkin" in most of the world means something very much like our Kabocha, widely available in North America. Some other hard winter squash can substitute. For details see our Kabocha page.
  2. Bread:

      These should be large 1/2 inch thick slices of white bread weighting about 1 ounce each. Either French or Country Style will work.
  3. Paprika hot:

      Preferably this should be Spanish, but Hungarian hot paprika can be used if Spanish is not available.
