This soup is very popular in Germany during the winter with almost every Ratskeller and Gasthof having a pot simmering on the back burner. It is sufficiently substantial to serve as a main dish for lunch or supper and makes a great party dish. Recipes vary, see Note-4.

  1. You'll need at least an 5-quart pot for this recipe.
  2. Trim the BEEF of excess fat and cut into cubes about 3/4 inch on a side.
  3. Slice ONIONS thickly crosswise then chop coarse. crush GARLIC, slice and chop small. Mix
  4. In a heavy skillet, heat 2 T Bacon Drippings or Butter and fry Beef in batches until lightly browned, returning each batch to the pot.
  5. Heat 1 T Bacon Drippings in the skillet and fry Onion mix stirring until translucent. Add to the pot with the beef.
  6. Add Paprika, Thyme and Caraway to the pot. Cook stirring over moderate heat for a few minutes to blend flavors.
  7. Add Water and Stock, bring to a boil, cover and simmer for about 1 hour.
  8. Peel POTATOES and cut into 3/4 inch cubes. Tip and tail BEANS and cut into 1 inch lengths. Stir both into the pot and simmer another 30 minutes or until all ingredients are tender.
  9. Stir in Tomato Paste and Salt, adjust to taste.
NOTES:
  1. Beef:   Weight is boneless with all excess fat removed. Chuck roast provides the best combination of long cooking durability and flavor but other cuts will also work, avoiding those that are too tender or too lean.
  2. Bacon Fat:   Drippings from fried bacon are preferred but Butter or Oil can be used.
  3. Paprika:   Real Hungarian sweet paprika please. Supermarket paprika has no flavor.
  4. Variations:   Many recipes use green bell peppers instead of green beans (more Hungarian). Many add a tablespoon or so of lemon juice or 1/2 cup of red wine and some use pepper in place of the caraway seeds (add in the last step).
