Green Mango Chutney

Called "Raw Mango Chutney" in India, it is often mixed with plain natural yogurt as a dip (2 parts Yogurt to 1 part Chutney). This version is particularly delicious.

Some variations use Mint Leaves instead of Cilantro.

Make   -   (37 min)
  1. Peel MANGO with a vegetable peeler and cut into small chunks.
  2. Cap SERRANO and chop medium. Core in, this chutney will be satisfyingly sharp by Southern California standards. Remove the Core if you want an unusually mild chutney - or use two chilis if you want it scorching.
  3. Slice GINGER very thin, cut the slices into threads, and chop fine.
  4. Remove thick stems from CILANTRO, thinner stems are fine. Chop coarse for measuring. Measure is moderately packed.
  5. In a mini-prep or larger food processor, place All Items except Cilantro and Water. Run until a medium textured paste.
  6. Stir in Cilantro and 1 T Water. Run until a smooth paste.
  7. Refrigerated in a sealed jar, this chutney will keep for a few days.
NOTES:
  1. Mango, Unripe:

      Weight is peeled flesh, about what you get from a medium mango. This needs to be a truly unripe mango, not a regular one not quite ripe yet. They can be found in Philippine and other Asian markets. If you've paid extra for a nice hard green mango, and when cut it turns out to be light yellow inside, don't panic - if it's pretty hard, it'll still make a fine chutney, maybe cut the sugar back a bit.   2. Serrano Chili:

      Properly hot green Indian chilis are not available in most of North America, so Serranos are used as a substitute. They are fleshier and more flavor, but nobody seems to be complaining. For details see our Indian Chilis page.
