Liver and Onions are a standard pairing worldwide. This Korean take is quick, easy and rather tasty - you may not even notice it's liver. Do not overcook, the onions should still be a bit crisp.

Liver (1)
Onion
-- Seasonings
Garlic
Soy Sauce
Sesame Oil dark
Sesame, toasted (2)  
Sugar
Pepper, black

Note: I have cut the amount of sugar in the pattern recipe in half - adjust to your taste.

Prep   -   (25 min)
  1. Slice LIVER thin, then into strips about 3/4 inch wide.
  2. Quarter ONION lengthwise, then crosswise about 1/2 inch wide.
  3. Slice GARLIC into thin slivers. Mix all Seasonings items together.
  4. Pinch stems from SNOW PEAS pulling forward to remove as much string as will come with it. Slice diagonally into 2 to 3 pieces, depending on size. Slice SCALLION crosswise about 1/8 inch thick, white and green. Mix.
Run   -   (15 min)
  1. Place Liver in a sauté pan. Stir in Onion and Seasoning mix. Bring up to frying temperature quickly, then fry over fairly hot flame for 5 minutes, tumbling now and then.
  2. Stir in 2/3 cup Water, bring to a boil, cover and simmer very slowly over low heat for about 5 minutes, tumbling a couple of times.
  3. Serve hot, garnished with Snow Pea mix.
NOTES:
  1. Liver:

      The pattern recipe calls for Lamb liver, but other livers can be used. I favor Pork liver, but even Beef liver or Chicken livers could be used.
  2. Sesame Seeds:

      Toasted sesame seeds are almost always used. If you don't have them, just dry pan roast white sesame seeds, stirring and shaking, until they are a medium blonde color. For details see our Toasted Sesame Seeds page.
