An amazingly tasty salad that can survive for hours on the buffet table, if it isn't all eaten sooner.

Make   -   (1-1/4 hrs - 55 min work)
  1. In a sauce pan, place FREEKEH, 2 c Water, Bouillon, and Salt. Bring to a boil and simmer covered until Freekah is tender and all the Water has been absorbed. Check water and scrape up from the bottom as it nears completion. Set aside to cool.
  2. Meanwhile: Chop ONION small. Chop BELL PEPPER small. Chop PARSLEY fine. Chop ARUGULA coarse. Herb measures are after chopping, moderately packed. Mix all in a spacious mixing bowl.
  3. Dressing: Crush GARLIC and chop fine. Squeeze LEMON JUICE. Mix all Dressing items in a small jar.
  4. Once Freekeh is fairly cool, (15 to 20 minutes), mix into Onion mix until well distributed.
  5. Shake up the Dressing, pour over the Salad and tumble to coat.
  6. Serve cold or at room temperature.
NOTES:
  1. Freekeh:

      This is unripe durum wheat burned in its own husks, then cleaned, dried, and lightly crushed. It is popular from Algeria, through the Levant, and also Turkey. For details see our Freekeh page.
  2. Bouillon:

      Measure is for powdered bouillon, like Vegeta. This is about the same as one crushed bouillon cube.
  3. Pomegranate Molasses:

      This product is available in small bottles from markets serving a Levantine or Turkish community, and is available on-line.
  4. Aleppo Flake

      This Chili Flake comes in two types, Aleppo Mild, which is very mild, and Aleppo Extra Hot, which is still rather low heat compared to other Chili Flakes. If a recipe just says "Aleppo", mild can be presumed. These are now quite available in North America, in markets with a good spice section, or can be ordered on-line. If you need to use a hotter flake, cut the quantity to about 2/3 or even 1/2.
