This salad is derived from one served in Palestinian restaurant "Donyana" in the ancient port city of Akka (Acre), now within northern Israel.

Fennel Bulb (1)
Apple, tart (2)
Dill, fresh
Parsley
Almonds, blanched
Cranberries dry (3)

Make   -   (55 min)
  1. Prepare DRESSING, combining ingredients in a small jar.
  2. Cut FENNEL BULB in half lengthwise and cut out core. Slice crosswise very thin. Reserve some Fennel Leaves (if available) for garnish.
  3. Quarter APPLE lengthwise, and cut out core. Slice crosswise very thin. Immediately submerge in cool water to prevent browning.
  4. Chop DILL and PARSLEY fine. Measure is after chopping moderately packed. Mix with Fennel.
  5. Chop ALMONDS very coarse. Toast them in a dry pan until golden brown. Mix with Fennel.
  6. Mix CRANBERRIES with Fennel.
  7. Drain Apples well and mix with Fennel.
  8. Shake up Dressing and pour over Salad. Tumble until everything is well coated.
  9. Serve lightly chilled, garnished with Fennel Fronds (if available). When serving, it has to be a semi-arranged salad, as the Almonds and Cranberries tend to congregate at the bottom of the mixing bowl. Scoop some up to put on top of each serving.
NOTES:
  1. Fennel Bulb:

  2. Apple, tart:

      The usual selection here is the green Granny Smith, but other tart apples can be used.
  3. Cranberries dried:

      These should fresh, bright, and plump. If not, you will have to soak them before using. In Palestine, Sour Cherries would probably be used, as they are available in the region. Turkey is the largest producer of sour cherries.
  4. Orange Zest:

      1 Tablespoon is about what you would get from a medium size Orange. Use a Microplane or zester. Use the orange layer only.
  5. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
