In Morocco this soup is associated with the Muslim rituals of Ramadan - but we infidels can make it and eat it any time we please. Substantial, flavorful, sure to please - and easy to make too.

    PREP
  1. Soak CHICKPEAS 8 hours or overnight in 1-1/2 cup water.
  2. Cut LAMB into 1/2 inch cubes.
  3. Grind All * Items together.
  4. Chop CELERY, ONIONS and PARSLEY small. Mix.
  5. Peel TOMATOES and chop small.
  6. Peel TINY ONIONS. Cut as little as possible from top and bottom so they hold shape while cooking.
  7. Juice LEMON.
  8. RUN
  9. Heat Butter in pot or large sauté pan. Stir in Lamb, Spice Mix and Celery Mix. Cook stirring over moderate heat for about 5 minutes, then stir in Tomatoes. Continue to cook, stirring frequntly, over moderate heat for another 10 to 15 minutes.
  10. Wash Lentils and stir into the pot along with Chickpeas and 2 quarts (8 cups) of Water. Bring to a boil and simmer 1-1/2 hours.
  11. Stir in Tiny Onions and continue to simmer another 30 minutes.
  12. Stir in Noodles and continue to simmer until tender, another 5 minutes or so.
  13. Stir in Lemon Juice and take off the heat. Check Salt and serve.
NOTES:
  1. Chick Peas:   1/2 cup dry will yield about the same as one 15 oz can of canned chick peas. Canned can be used if you are in a hurry. More on Chickpeas.
  2. Onions, Tiny:   Select boiling onions about 1-1/4 inch diameter before peeling (about 10 that size) - or smaller.
  3. Noodles:   Comunities serving communities from the Middle East, Caucasus and Turkey sell packages of very fine noodles cut to about 1 inch. If you don't have these you can break up angel hair pasta or vermicelli to 1 inch lengths. 1-1/4 ounce is about 1/3 cup.
  4. Time:   Cutting and cooking time is 2-3/4 hours. Add to this soaking time for the chickpeas (or use canned).
