Green Beans with Olive Oil

This simple side dish or mazzeh is very popular in Palestine, and also (with variations) in the rest of the Levant. It can be served warm or at room temperature, and reheats easily.

Tomatoes (1)
Onions
Garlic
Cumin
Allspice
Olive Oil
Salt
Pepper

Prep:   -   (30 min)
  1. Tip and Tail BEANS and cut them in half crosswise. Optionally, You can leave them full length for a mazzeh.
  2. Scald TOMATOES one minute in boiling water. Quench in cold water and peel. Cut into 3/4 inch dice.
  3. Chop ONIONS fine.
  4. Slice GARLIC very thin.
  5. Grind together Cumin and Allspice
Run   -   (30 min)
  1. In a spacious sauté pan, heat Olive Oil. Stir in Onions and fry stirring until translucent. Stir in Garlic and Cumin mix. Fry stirring another 2 minutes.
  2. Stir in Tomatoes, Salt and Pepper. Cover and simmer for about 10 minutes, stirring a couple of times. Add a little water if necessary.
  3. Meanwhile:   Bring a saucepan of lightly salted water to a boil. Stir in the Green Beans and cook until just tender. Drain and stir into the sauce.
  4. Serve warm, or at room temperature, drizzled with ExtV Olive Oil as desired.
NOTES:
  1. Tomatoes:

      If ripe flavorful tomatoes are not available, substitute a 14 ounce can of plum tomatoes, with juice.
  2. Comments:

      The pattern recipe called for 1 teaspoon of Sugar added with the Tomatoes. I consider this excessive, in fact redundant. You can add sugar if you like, but I will not.
