This amazingly flavorful dish is both tart and sweet, so it is best served with meats, poultry or fish, but roasted potatoes would also work well.

Beets w/tops (1)

Garlic
Tarragon fresh (2)
Butter
Pomegranate Molasses (3)  
Salt
Pepper
Water

Prep   -   (25 min)
  1. Wash BEET GREENS well. Chop Leaves and Stems small.
  2. Peel BEETS and cut into narrow wedges, 6 to 8 per Beet depending on size.
  3. Quarter ONION lengthwise, then slice thin crosswise.
  4. Crush GARLIC with the side of your prep knife.
  5. Chop TARRAGONmedium.
Run   -   (55 min)
  1. In a spacious sauté pan, large enough for the Beets to be in one layer - (a 2-1/2 quart pan is just sufficient for 1 # of Beets), heat Butter. Fry Onions stirring until translucent.
  2. Stir in Beets and Garlic. Drizzle with the Pomegranate Molasses and sprinkle on Salt and Pepper. Pour in enough Water to nearly cover the Beets.
  3. Bring to a boil, cover, and simmer until Beets are nearly tender (about 20 minutes).
  4. Uncover, and hold at a slow boil until liquid has become syrupy.
  5. Layer the Greens over, turn the heat back down, cover, and steam them for about 5 minutes.
  6. Add Tarragon and mix everything until well distributed.
  7. Check seasoning and serve hot.
NOTES:
  1. Beets:

      Weight is for roots only, so bunches with leaves would weigh more. Select Beets with nice looking greens. I use the stems to 7 inches below the leaves to keep the ratio of greens to stems the way I like it.
  2. Tarragon:

      Fresh Dill could also be used, but use more because it's not as strong as Tarragon, which must be used with caution. All we have here in North America is Russian Tarragon, but that's what they'd have in Central Asia anyway. French Tarragon is stronger, but a non-viable mutant that cannot survive without considerable human help - so color it expensive.
  3. Pomegranate Molasses

      This is commonly available in bottles in markets serving a Near Eastern or Middle Eastern community.
