Garlic
Oil
Butter

Lemon Juice
Tomato Sauce (2)
Dill, dried
Salt
Pepper

Parsley, chopped

    Crackers
Prep:   -   (35 min)
  1. Brush off MUSHROOMS as needed. and chop very fine - see Comments.
  2. Chop ONION fine.
  3. Crush GARLIC and chop very fine.
  4. Squeeze LEMON JUICE.
  5. Chop Parsley for garnish (if using).
Run:   -   (30 min)
  1. In a large skillet, heat Oil and Butter over moderate heat. Stir in Onions and fry stirring until translucent.
  2. Stir in Garlic and fry stirring for about 30 seconds.
  3. Stir in Mushrooms and fry stirring until they have given up most of their moisture, but not all.
  4. Stir in all Seasoning items and fry stirring a couple more minutes.
  5. Serve cool with Bread or Crackers.
NOTES:
  1. Mushrooms:

      White Mushrooms or Cremini are fine for this recipe. Other types of Mushrooms can be used when available.
  2. Tomato Sauce:

      Rather than using 1 T tomato paste called for in the pattern recipe, I like to add a larger amount of a simple tomato sauce, which has a fresher flavor. My favorite is Faraon Spanish Style, but other simple sauces will also work.
  3. Comments:

      I ran the Mushrooms in a food processor. The Onions I diced very small, then pulsed a few times in the processor. You don't want to process Onions too much or they will be bitter.
  4. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
