A really amazing Slaw! Leeks are a popular vegetable in Poland, used in many recipes. Raw salads of shredded vegies are very popular there, and don't wilt on the buffet.

Make   -   (25 min + 1 or more hrs rest)
  1. Trim LEEK recipe ready (see Photo), then cut lengthwise into very thin strips and cut strips crosswise small. Easiest to cut whole Leeks in half lengthwise, then in half crosswise, Cut to strips flat side down.
  2. Peel APPLE, cut in half lengthwise and core it. Then grate on the large hole side of your Box Grater. Mix with Leeks.
  3. In a suitable mixing bowl, place all Dressing items. Pour the Leek mix over, and massage until the dressing is evenly mixed with the Leeks.
  4. Refrigerate for at least an hour for the flavors to blend. A few hours is OK, but much more and it may become bitter.
  5. Serve cold.
NOTES:
  1. Leeks:

      Weight is after trimming and making "recipe ready" (see Photo).
  2. Apples:

      The Apples doen't get cooked, so chose whatever you like, thought we recommend against Red Delicious (too watery).
  3. Pepper:

      The pattern recipe calls for White Pepper, but I never have freshly ground white pepper conveniently on hand, so use Black Pepper instead, as I don't mind the tiny black specs.
  4. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
