Radish Salad with Sour Cream

A very simple salad, fresh, and lightly tart, an excellent foil to heavier dishes. It can be made well ahead if the Radishes are salted and well drained.

Red Radishes  
Salt
Scallion
Dill, fresh
Sour Cream

Make   -   (45 min - 13 min work)
  1. Trim leaves from RADISHES, leaving enough stem to hold on to while slicing. Wash and slice thin, but not paper thin. Mix with salt and let sit 30 minutes or so. Drain, rinse well, and wring out excess water.
  2. Chop SCALLIONS fine. Mix with drained Radishes.
  3. Chop DILL small.
  4. Tumble Radish Mix with Sour Cream until well distributed.
  5. Chill lightly and serve sprinkled with Dill
