Incredibly simple to make, this is one of my favorite salads. While it can be made with white cabage, I wouldn't - the flavor is not the same nor the color as interesting.

Red Cabbage
Olive oil extV
Malt Vinegar
Salt
Sugar

    PREP
  1. Core the CABBAGE and cut lengthwise into narrow slices, and cut the slices to shred about 2 in long. Break up clumps.
  2. Toss Cabbage with OLIVE OIL to coat, then add VINEGAR, SALT and SUGAR. Toss thoroughly.
  3. RUN
  4. Let sit for 2 hours or more to soften some, tossing occasionally to keep dressing even.
  5. Serve
