Fit Fit is a breakfast or snack dish made from leftover flatbread In Eritrea its made from Kicha Bread, and in Ethiopia from Injira Bread. This is an Eritrean version.

Kicha bread is quite dense and filling, so, unless someone is a real big eater, this recipe is breakfast for three. It can also be used as a snack, or as an appetizer (small portions, perhaps cut into squares).

Do Ahead   -   (45 min)
  1. Make KICHA per our recipe Kicha Bread.
Make   -   (12 min)
  1. Tear the Kicha into bite size pieces. Let it get a little dry if you have time.
  2. Heat Ghee or Butter (no browning with Butter). Stir in Berbere Spice and Salt. Fry stirring until it is very aromatic, about 30 seconds.
  3. Stir in Kicha and tumble over moderate heat until all pieces are warmed through and evenly coated with Butter and Berbere, about 3 minutes.
  4. Serve warm topped with Yogurt.
NOTES:
  1. Kicha Bread:

      This is a standard flatbread in Eritrea. Other flatbreads can be used. In Ethiopia Injira Bread would be used. See our recipe Kicha Bread
  2. Ghee:

      Ghee would be used in Africa, but since frying temperatures are low, regular Butter could also be used. If you can't accept butter or ghee, use oil. Avocado Oil would be best but Pure Olive Oil (not virgin) will work OK. For details see our Ghee page.
  3. Berbere:

      This is the most essential spice mix in Eritrea and Ethiopia, usually moderate in chili heat. It's easy to make by our recipe Berbere Spice Mix.
