In central Kenya, Githeri is a very popular stew of whole beans and whole corn kernels, but it also sometimes appears as a salad. This is a good party salad as it won't wilt. Also see Comments.

Onion, Red
Cilantro Leaves
Lime Juice
Salt

IF using Dried Beans   -   (8 hrs - 10 min work)
  1. Soak 1 cup KIDNEY BEANS and 1 t salt (yes, salt) in 2 cups water for 7 hours or overnight.
  2. In a sauce pan, with Water to cover well, bring Kidney Beans to a boil uncovered, then cover and simmer until tender but still intact. This can be as short as 45 minutes or well over an hour depending on age of the beans.
MAKE   -   (15 min + cooling time)
  1. Drain BEANS and CORN KERNELS. Mix.
  2. Slice CHERRY TOMATOES in half crosswise.
  3. Dice ONION about 3/8 inch.
  4. Chop CILANTRO medium. Measure is moderately packed.
  5. Squeeze LIME JUICE.
  6. In a large mixing bowl, gently toss together All Items.
  7. If you have time, place the salad in the fridge for about 30 minutes to cool and blend flavors.
  8. Serve cool or cold.
NOTES:
  1. Kidney Beans:

      Large Red Kidney Beans are what you want - 1 cup of Dried Beans (or 2 14 oz cans of Canned Beans) to yield 3 cups cooked. As always, make sure dried beans are fresh, or they may not cook tender.
  2. Corn:

      One 14 ounce can of Canned Corn will work fine. Frozen can be used as well, but is generally considered not as good as canned. If you use fresh cut from the cob corn, you will have to cook it until just done.
  3. Comments:

      Although it is not in the pattern recipe, feel free to add 2 or 3 Tablespoons of Extra Virgin Olive Oil if you wish to.
  4. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
