This is an excellent colorful vegetable salad made a little more substantial by including Athieke / Gari. Some versions add canned tuna or other animal items, but this clean tasting version is vegetarian.

MAKE   -   (40 min + sitting time)
  1. Place Gari in a large bowl. Stir in cool Water 1 Tablespoon at a time until rehydrated. It should be damp, but not soggy and still rather granular. Set aside.
  2. Cut TOMATOES, CUCUMBRS and BELL PEPPER into 3/8 inch dice. Mix all.
  3. Cut SCALLIONS crosswise less than 1/4 inch, white and light green only. Add to Tomatoes.
  4. Cap and Core Habaneros and chop very fine. Squeeze LIME JUICE. Mix all Dressing items in a small jar.
  5. Place Salad mix in a large mixing bowl. Work in Athieke until well distributed.
  6. Shake Dressing vigorously and pour over Salad. Work it in until evenly distributed. Let stand about 1 hour to blend flavors.
  7. Serve over lettuce leaves or as desired - cold, but not chilled.
NOTES:
  1. Athieke / Gari:

      This is Cassava root, ground, fermented and dried into a granular texture. It is pretty much identical to the Manioc Farina of Brazil. For details see our Cassava / Manioc / Yuca page.
  2. Cucumbers:

      If at all possible, use small cucumbers that don't need to be peeled or seeded, such as Persian, Japanese or European. If you have only the standard waxed green blimps, peel them and seed them, then measure out the given weight.
  3. Habanero:

      Scotch Bonnet / Habanero chilis from the Caribbean now dominate in West Africa. They are hot, but capped and cored they are largely disarmed, so two gives this recipe just a touch of sharpness. For details see our African Chilis page.
