Pasta with Spiced Tuna Sauce

Somalia was ruled by Italy for about 60 years. The Italians are gone, but Pasta remains very popular. With its long coastline, this is a popular sauce in Somalia.

Do Ahead
  1. If not on hand, make Xawaash Spice Mix (15 min).
  2. Make or buy Tomato Sauce.
Prep   -   (20 min)
  1. Chop ONION small.
  2. Crush GARLIC and chop fine.
  3. Chop CILANTRO coarse. Measure is after chopping
  4. Mix all Seasoning items.
  5. Drain most of the oil from the Tuna and break it up small if not already that way.
Run   -   (30 min)
  1. In a coverable sauté pan or similar, heat Oil over moderate flame and fry Onion, stirring until soft and translucent.
  2. Stir in Garlic and fry stirring until softened but not browned.
  3. Mix in Tuna, along with Seasoning mix and Cilantro. Fry stirring until well heated.
  4. Stir in Tomato Sauce. Bring to a simmer, cover, and simmer over low heat for 15 minutes. Stir in a little boiled water if you need to loosen the sauce.
  5. Serve hot over Pasta, optionally with a Banana on the side (customary).
NOTES:
  1. Tuna:

      This is one 5 oz can of Tuna, preferably in Olive Oil.
  2. Tomato Sauce:

      Marinara or some other rather simple Tomato Sauce is appropriate.
  3. Xawaash Spice Mix:

      This is the most common spice mix in Somalia. It is very easy to make by our recipe Xawaash Spice Mix.
  4. Pasta:

      Spaghetti is traditional, but other Pasta shapes can be used, short or long. The photo example was made with Linguini, my favorite long pasta. This recipe is sufficient for about 1-1/4 pounds of dried pasta.
  5. Banana:

      Somalis eat many dishes with a Banana, taking a bite of Banana between bites of the recipe.
