Suugo Suqaar Pasta Sauce

Somalia was ruled by Italy for about 60 years. The Italians are all gone, but Pasta remains very popular, especially with this beefy sauce.

Do Ahead   -   (15 min)
  1. If not on hand, make Xawaash Spice Mix.
Prep   -   (40 min)
  1. Place GROUND BEEF on your cutting board and chop it up quite a bit to make it easier to separate in the frying step.
  2. Scald TOMATOES one minute in boiling water. Quench in cold water and peel. Chop small.
  3. Chop ONIONS fine. Crush GARLIC and chop fine. Mix.
  4. Blast BELL PEPPER black with your Kitchen Torch and brush off the skins under running water (see Bell Pepper). Cap, seed an chop fine.
  5. Chop CILANTRO coarse for Garnish.
  6. Mix all Seasoning items.
Run   -   (1-1/4 hrs)
  1. In a coverable sauté pan or similar, heat Oil and fry Beef, stirring until it has lost all raw color, any exuded liquid has evaporated.
  2. Add Onion mix, Seasoning mix, and Bell Pepper to the pan and fry stirring until Beef is lightly browned. Be careful not to burn the fond that sticks to the pan.
  3. Stir in Tomatoes and Tomato Sauce. Bring to a boil, turn to a simmer, and scrape up all fond adhering to the pan. Cover and simmer, stirring often for 30 minutes.
  4. Uncover and reduce Liquid as needed for a sauce consistency. Check Salt.
  5. Serve hot over Pasta, liberally garnished with Cilantro.
NOTES:
  1. Beef, Ground:

      For best flavor, use one 83% lean or less. Ground Goat, Chicken, or Turkey can also be used, but not Pork, as Somalia is 100% Muslim.
  2. Tomatoes:

      These should be ripe and flavorful. If your tomatoes aren't good enough, use canned. The pattern recipe called for a 28 ounce can of Diced Tomatoes.
  3. Tomato Sauce:

      Rather than using 2 T tomato paste as called for in the recipe, I prefer to add a convenient 8oz can of a very simple tomato sauce, which helps make up for deficient tomatoes. My favorite is Faraon Spanish Style, but other simple sauces will also work.
  4. Xawaash Spice Mix:

      This is the most common spice mix in Somalia. It is easy to make by our recipe Xawaash Spice Mix.
  5. Bell Pepper:

      Skinning the Bell Pepper was not in the pattern recipe, but I do it to improve texture and avoid annoying loose skins. With the Kitchen Torch it takes only 2-1/2 minutes.
  6. Pasta:

      Any Pasta shape can be used, short or long.
