This spice mix from Senegal is mainly used as a coating for meats to be grilled. It is also used as a dry dip for meats and fish, which is very good in my opinion.

Peanut Flour (1)
Cayenne
Ginger, powdered  
Selim Pepper (2)
Salt
Pepper, black

Make:   -   (15 min)
  1. Grind All Items to a fine powder as needed. Mix All Items and store in a tightly sealed glass jar.

NOTES:
  1. Peanut Flour:

      This is sold in African markets, but you can just grind some Raw Skinned Peanuts fairly fine in a food processor - but watch carefully - If you grind too long it will start to exude oil and become raw Peanut Butter.
  2. Selim Pepper:

      This spice is used mainly in Senegal, but can be found on-line in North America.   Subst:   use 1/2 Cubeb Pepper or Black Pepper, and 1/2 Nutmeg.
  3. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch tt=to taste ar=as required
