An interesting appetizer with sweetness, tang, and sharpness. Chows (Chow-chows) are usually pickled, but Pineapple is already self pickled.

Pineapple
Garlic
Chilis, red (1)  
Cilantro
Salt

Make:   -   (20 min + 1 hr marinate)
  1. Peel and Core PINEAPPLE. Cut into about 3/4 inch chunks.
  2. Crush GARLIC and chop very fine
  3. Chop CHILIS fine.
  4. Chop CILANTRO small.
  5. Tumble All Items in a mixing bowl until uniform. Let sit for an hour or so to blend flavors.
  6. Serve chilled.
NOTES:
  1. Chilis, Red:

      Here you have to use your own best judgement as to how many, what size, and how hot. I used two Fresnos with the seed mass removed but veins left in. This provided chili heat that most people are OK with, at least here in Southern California.
  2. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required, tt=to taste
