From Spanish influence, Salt Cod (Bacalao) is popular in the Caribbean, included in many recipes, though it's an expensive import. This is one of several Salt Cod Salads made in Puerto Rico.

Do-Ahead   -   (7 hrs - 20 min work)
  1. Soak SALT COD in several changes of cold water for at least 5 to 8 hours.
  2. Place Salt Cod in a pan covered with cold water and bring to a boil (uncovered to prevent foaming over). Drain. Repeat this two more times. Check that it isn't still too salty if so, repeat again. Let cool.
  3. Hard cook EGGS (see our Boiling Eggs for best method). Peel and cool thoroughly.
  4. Peel POTATOES. Cut into about 5/8 inch dice. Place in a pan with Water to cover and bring to a boil. Simmer until just tender. Drain well and let cool.
Make   -   (45 min)
Add all items to a large mixing bowl as you go.
  1. Crumble Salt Cod into flakes, and place in a large mixing bowl along with Diced Potatoes.
  2. Peel ONION. Cut into quarters lengthwise and slice crosswise fairly thin.
  3. Core BELL PEPPERS and dice about 1/2 inch.
  4. Peel AVOCADO and cut into about 5/8 inch dice.
  5. Dice TOMATOES about 1/2 inch on a side..
  6. Cut Eggs into wedges and cut wedges in half crosswise.
  7. Mix all Dressing Items in a small jar.
  8. Tumble Salad until components are well distributed. Shake up Dressing and pour over. Tumble to distribute evenly. Refrigerate until needed.
  9. Chop CILANTRO medium.
  10. Serve cool.
NOTES:
  1. Salt Cod:

      [Bacalao]   This is most easily found in Italian markets and delis. A reasonable substitute is salted Pollock, a relative of Cod, but smaller. It is more delicate and will take less soaking time. Goya brand has become fairly common lately (2018). For details see our Salt Cod page.
  2. Potatoes:

      Red Potatoes or White rose will work well. This is one place where Yukon Gold type potatoes will also work. For details see our Potatoes page.
  3. Comments:

      The Cilantro is my addition. I did not find a Puerto Rican recipe that listed Cilantro, though I did see photos including it. This salad seemed to me to need an herbal note. Also, Puerto Ricans very much avoid hot chilis, but I live in Southern California, so to me this is a "missing item". Depending on who I will be serving, I may add a very finely chopped Serrano Chili.
