A superb buffet salad, attractive, tasty, durable, and you can make and dress it the day before. Bean salads are popular in the Caribbean. See also Comments.

can Kidney Beans  
can Lima Beans
Green Beans
Onion, red
Bell Pepper (1)
Cilantro
-- Dressing
Chili Pepper (2)
Lime Juice
Olive Oil ExtV

Make   -   (1-1/2 hrs - 30 min work (hand grated))
  1. Drain and rinse CANNED BEANS. Mix.
  2. Cut GREEN BEANS diagonally into about 1-1/2 inch lengths. pour into boiling water and cook until just tender. Refresh under cold running water. Drain well.
  3. Quarter RED ONION lengthwise and slice abut 1/8 inch wide crosswise. Separate all the layers.
  4. Cut BELL PEPPER into strips about 1/4 inch wide and 1-1/2 inches long. If using Mini Peppers, cap, cut in half lengthwise, remove seed mass, and cut crosswise a little more than 1/4 inch wide.
  5. Strip off CILANTRO leaves and chop them medium. Measure is after chopping and lightly packed.
  6. Place all Above Items in a mixing bowl and tumble until well distributed.
  7. Chop CHILIS very fine.
  8. Squeeze LIME JUICE.
  9. Mix all Dressing Items in a small jar. Shake up well and pour over the Salad.
  10. Serve cold.
NOTES:
  1. Bell Pepper

      This can be Red, Green, Yellow, Orange, or even Purple (if you can find it). The photo example was made with sweet mini peppers, Red, Yellow, and Orange.
  2. Chili Peppers

      These should be fresh hot red chilis like Thai of de Arbol, but use your own best judgement. Chili flake or powder could also be used. The photo example was made with two Aji Limo, but you probably don't have those.
  3. Comments:

      This salad is fine for refrigerating overnight. I use canned beans for this sort of salad, as they are more uniformly intact than dried often turn out. Goya is a top brand for canned beans, unless you are still boycotting them for supporting Donald Trump on TV.
