An essential seasoning in Caribbean homes, but usable everywhere. There is no "official" recipe, but this one is typical.

Allspice Berries
Garlic Powder
Onion Powder
Chili Powder (1)  
Paprika
Thyme, dried
Oregano, dried  
Celery Seed
Salt (2)
Pepper, Black

Make:   -   (10 min)
  1. In your Spice Grinder, grind Allspice Berries
  2. Mix All Items well.
  3. Give it a quick whirl in a food processor to make it finer.
  4. In a sealed jar away from heat and sunlight, this mix should be good for at least 6 months.
NOTES:
  1. Chili Powder / Flake:

      This is variable from none (Cuba, Puerto Rico) to plenty (Jamaica, Trinidad & Tobago). Use the amount and hotness you like. This can be Aleppo Extra Hot for mild, ground Japones or Cayenne for medium, and Ground Habanero for very hot.For details, see our Chili Powder & Flake page.
  2. Salt:

      This is highly variable, from none to 1 Tablespoon. Use your own best judgement.
  3. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
