Shan Tofu Salad

This refreshing salad is made pretty much as given by Naomi Duguid (Burma p51) as it is not wise to meddle much with something so simple and elegant. See also Comments.

Shan Tofu (1)

Cilantro Leaves
Toasted Sesame (2)

Soy Sauce
Rice Vinegar (3)
Shallot Oil (4)

Do-Ahead
  1. Make Shan Tofu. Refrigerate 8 hours or overnight - (8 hr - 20 min work)
  2. Toast Toasted Sesame Seeds if you don't have them on hand (10 min).
  3. If you want to use it, make Shallot Oil (25 min to 6 hours- see recipe).
Make:   -   (15 min)
  1. Cut SHAN TOFU as desired and place in individual bowls, or, if serving buffet, in a wide shallow bowl.
  2. Chop CILANTRO small and sprinkle over Salad.
  3. Sprinkle Sesame Seeds over the Salad (don't over-do it).
  4. Crush GARLIC and chop very fine. Mix together all Dressing Items and stir to dissolve Salt.
  5. Drizzle Dressing over Salad and serve cool, but not chilled.
NOTES:
  1. Shan Tofu:

      This "Tofu" is very easy to make - but must be made a day ahead. See our recipe Shan Tofu.
  2. Toasted Sesame Seeds

      This is a pantry staple in Southeast Asia, Korea and Japan. It can be bought in Asian markets, but is better made by our recipe Toasted Sesame Seeds.
  3. Rice Vinegar:

      My favorite by far is Kong Yen Foods Co.'s Aged Gourmet Rice Vinegar from Taiwan.
  4. Shallot Oil:

      This is a Southeast Asian pantry staple. It's easy to make by our recipe Fried Shallots / Shallot Oil recipe. If you don't have it, or don't favor it, use another salad oil, but not Extra Virgin Olive Oil.
  5. Comments:

      The pattern recipe used very finely sliced threads of Kaffir Lime leaves, and suggested Cilantro Leaves as a substitute. Thai Basil leaves would also be very good.
