This dipping sauce for spring rolls is farely robust in flavor but with a moderate chili bite. Adjust for more or less as you wish. For a Thai style sweet and sour sauce see Spring Roll Sauce #1.

Lime Juice
Fish Sauce
Chili Powder (1)
  1. Crush GARLIC and chop very fine.
  2. Mix All Ingredients
  3. Let it rest 20 minutes or so before using. Packed in a small tightly covered jar this will keep a month or so in the refrigerator.
NOTES:
  1. Chili Powder: I use Reshempatti which is fairly hot. but in this quantity gives a chili bite that's fairly mild. Select a powder that gives you the heat you want. For more information see my Chili Page.
