Shrimp with Mushrooms & Garlic

Simple, quick and very tasty! This recipe will also serve just fine as a side dish for standard American fare serving 4 to 6 depending on how generous you want to be (which may depend on if you got your shrimp cheap at an ethnic market or from the local super).

Shrimp whole peeled
Garlic
Red Chilli (1)
Straw Mushrooms (2)
Coconut Milk
Fish Sauce
Black Pepper
Oil
    Prep
  1. Crush GARLIC, slice and chop fine.
  2. Cut CHILIS into shreds. Cut MUSHROOMS in half lengthwise if "unpeeled" (see Note-2). Mix with SHRIMP, Coconut Milk, Fish Sauce and Black Pepper.
  3. Run
  4. In a sauté pan heat OIL over medium heat and stir fry Garlic until aromatic and showing a touch of color.
  5. Stir in Shrimp mix and simmer until the shrimp are just done.
  6. Serve with plenty of jasmine rice.
NOTES:
  1. Chilis:   Fresh Fresno or Holland Red chilis are fine here - see my Chili Page for more information.
  2. Straw Mushrooms:   Weight given is for drained mushrooms. These come in 15 oz net cans holding about 7.4 oz drained and come in two forms, "peeled" and "unpeeled". Use your own preference as to quantity and shape. See my Straw Mushroom Page for more information.
