Simple, quick and very tasty! This recipe will also serve as a side dish for Western cuisines.

Garlic
-- Shrimp mix
Shrimp
Red Chilli (1)
Straw Mushrooms (2)  
Coconut Milk
Fish Sauce (3)
Black Pepper

Prep   -   (14 min)
  1. Crush GARLIC and chop fine.
  2. Shell SHRIMP. De-vein if needed. Leave whole if small, cut in half if very large.
  3. Cut CHILIS into shreds. Cut MUSHROOMS in half lengthwise if "unpeeled" (see Note-2). Mix all Shrimp mix items.
Run   -   (10 min)
  1. In a sauté pan heat OIL over medium heat and stir fry Garlic until aromatic and showing a touch of color.
  2. Stir in Shrimp mix. Bring to a boil and simmer until the shrimp are just done, about 4 minutes.
  3. Serve with plenty of steamed Jasmine rice.
NOTES:
  1. Chilis:

      Around here we all use Red Fresnos, but Holland Red or similar medium hot chilis are fine. For details see our Thai Chilis page.
  2. Straw Mushrooms:

      Weight given is for drained mushrooms. These come in 15 oz net cans holding about 7.4 oz drained. They can be in two forms, "peeled" and "unpeeled". Use your own preference as to exact quantity and shape. For details see our Straw Mushrooms page.
