Beef with Broccoli & Rice Noodles

A popular item in California Thai restaurants, this stir fry displays a Chinese influence. The recipe will serve a normal man and woman as a main course, or 4 people if there are other dishes.

    Prep
  1. Make Chili Vinegar Sauce if you haven't already.
  2. Cut RICE NOODLES 1 inch wide by 3 inches long. If dried, first soak in water for 1/2 hour. If fresh just separate as needed.
  3. Slice BEEF very thin in pieces about 1" x 2".
  4. Cut BROCCOLI leaves into pieces about 2" x 2". Cut stems diagonally about 1/4" at the thick end increasing to 1" at the thin end.
  5. Chop GARLIC course.
  6. Mix together FISH SAUCE, SOY SAUCE, VINEGAR, BEAN SAUCE and SUGAR.
  7. Mix CORNSTARCH with 3 T Water.
  8. Run
  9. Everything must be ready - this will go very fast.
  10. In a wok or large sauté pan heat OIL over high heat and fry Garlic until it barely shows color, then stir in Beef. Stir fry until beef is no longer pink.
  11. Stir in Broccoli and stir fry until it is well coated with oil, then stir in the Fish Sauce mix and stir fry until well distributed.
  12. Stir up the Cornstarch mix to make sure it's suspended, then stir into the broccoli. Stir fry until well distributed.
  13. Stir in the Stock and simmer stirring about 4 minutes, then stir in the Rice Noodles and stir the minimum needed to get them well incorporated and hot. Serve immediately.
NOTES:
  1. This is thinly sliced hot chilis (Thai or Serrano) with rice vinegar and fish sauce - Recipe.
  2. Rice noodles should be 3/4" or wider, fresh or as soaked.
  3. Chinese broccoli is very similar to Italian broccoli except the leaves are a lot larger. If all you have is regular broccoli cut into small floretts and discard tough main stem.
