Yum! This appetizer is always a hit - but it's filling as hell so use caution. It goes extremely well with Armenian Lavash (Armenia is next door to Georgia) but can be used with pita or other breads or crackers.

can Kidney Beans red
Red Onion
Garlic
Walnuts ground
Cilantro
Coriander Seed
Wine Vinegar red
Water
Olive Oil
Cayenne pepper
Salt
  1. Drain KIDNEY BEANS. Divide in half and crush one half, but not too thoroughly, and mix back together
  2. Chop ONION and GARLIC fine, mix into Beans.
  3. Make sure your WALNUTS are fresh (no rancidity), grind in a food processor and mix into Beans.
  4. Chop CILANTRO small, grind CORIANDER SEED and mix into Beans.
  5. Mix ALL * ITEMS into Beans.
  6. Refrigerate overnight (if possible) to mature flavors.
  7. Serve with Lavash bread as in the photo (you can make rolls in advance or let diners roll their own) or some other suitable bread or crackers.
