Sauerkraut Salad

This is a summer salad in Ukraine, where sauerkraut is a very important ingredient (though usually served cooked).

Sauerkraut (1)
Scallions
Bell Pepper, red
Oil (2)
Honey

Pepper, black
Paprika (3)
Make   -   (1+ hrs - 10 min work)
  1. Wring out SAUERKRAUT thoroughly. Some prefer to give it a light rinse before wringing out, but I usually don't.
  2. Chop Sauerkraut very coarse. Chop SCALLION very fine. Mix.
  3. Stem and seed BELL PEPPER and cut into short fine juliennes. Mix with Sauerkraut
  4. Mix in Oil and Honey.
  5. Refrigerate for more than 1 hour for flavors to meld.
  6. Serve cold, garnished with Pepper and Paprika.
NOTES:
  1. Sauerkraut:   Success depends on the quality of the sauerkraut. For details see our Sauerkraut page.
  2. Oil:   Sunflower seed oil is the vegetable oil of Ukraine, but if not available a fairly neutral oil such as Pure Olive Oil (not virgin) will work well enough.
  3. Paprika   Use real Hungarian Sweet Paprika, not that sawdust flavored stuff they sell in the supermarkets. Hungarian has much better flavor and a much more intense red color.
  4. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
