This flavorful cranberry sauce is a bit healthier than the standard recipe which starts out "1 cup of sugar". You will probably want some sweetner but you can choose the one you prefer. One thing is certain, you're never going to want canned cranberry sauce again.

Orange Juice fresh
Ginger fresh
Orange zest
Cinnamon ground
Pineapple
Sweetner (1)
  1. Rinse CRANBERRIES and pick out any blemished ones.
  2. Squeeze ORANGE JUICE, slice GINGER very thin, then sliver and chop very fine, grate ORANGE ZEST (orange part only) and mix all with CINNAMON.
  3. Chop PINEAPPLE very fine.
  4. Bring Orange Juice mix to a slow boil and pour in Cranberries. Simmer the sauce stirring as the berries pop and squish any that fail to pop. Continue to simmer 10 minutes.
  5. Stir in Pineapple and bring back to a simmer. Sweeten to taste with sweetner of choice. Let cool and refrigerate until needed.
NOTES:
  1. Sweetener: I've used 2-1/2 oz palm sugar but honey or even plain white sugar can be used depending on your preference. Sweeten to taste but don't overseeten.
  2. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch
