Frittata with Pasta

This appetizer / breakfast dish is supposed to be made using leftover pasta - but I never have that, so I'm giving the recipe using dried pasta.

If you do have leftover pasta, you need two cups coated with any sauce.

Prep   -   (30 min - 7 min work)
  1. Cook PASTA the usual way being careful is isn't over cooked.
  2. Mix Pasta with Sauce and let get cold..
  3. Grate Parmesan.
Run   -   (15 min)
  1. Beat EGGS lightly. Mix in all Ingredients except Butter.
  2. Melt 3 T Butter in a suitable pan. Heat until it stops foaming, then pour in the Pasta mix. Fry over modrate heat until lightly browned on the bottom and starting to set on the top. This can be helped by covering the pan.
  3. Loosen Fritatta, place a plate over and invert, dumping the fritta out onto the plate browned side up.
  4. Melt 2 T Butter. As soon as it stops foaming, slide the Frittata back in, browned side up.
  5. Fry uncovered until lightly browned on the second side.
  6. Slice up and serve warm, room temperature or cold.
NOTES:
  1. Pasta:

      Any pasta you like. The photo sample is made with linguini.
  2. Sauce:

      Whatever you have. The photo specimen was made with Faraon "Spanish style" from a can, but a thicker sauce might have been better.
