Marinated Zucchini Appetizer

This popular antipasto / appetizer is easy to make and can wait patiently to be served. It can be served warm or cool.

Zucchini, thin (1)
Olive Oil, Pure
-- Dressing
Olive Oil, ExtV
Wine Vinegar, white
Mint Leaves, fresh
Salt
Pepper
-- Serve with
Bread
Olives

Make   -   (1-1/2 hours or more - 20min work)
  1. Slice ZUCCHINI a little more than 1/8 inch thick.
  2. In a heavy skillet, heat Pure Olive Oil and fry Zucchini in batches until cooked through and nicely browned around the edges. Toss in a dash more olive oil between batches if needed.
  3. Chop Mint fairly fine and mix all Dressing items in a small sauce pan. Heat until it just starts to bubble, then pour over Zucchini. Tumble well to coat. Let cool and marinade for an hour or so, tumbling now and then.
  4. Serve cool or warm garnished with mint leaves and accompanied by bread and olives.
NOTES:
  1. Zucchini:

    Use young zucchini around 1-1/2 inches in diameter.
