Potato & Vegetable Salad

This is one of the finest Potato Salads ever made. Italians love tart potato salads, but this one is a little unusual (for Italy). It uses Mayonnaise instead of Olive Oil.

Balsamic Vinegar

If the somewhat beige color bothers you for a potato salad, you could use Condimento Bianco (White Balsamic) instead of regular Balsamic Vinegar, but that certainly hasn't been an issue at parties here.

Do Ahead   -   (3 days)
  1. Make the Vegetable Vinegar Pickle.
Make   -   (2 hrs - 20 min work)
  1. Peel POTATOES and cut into 1/2 inch cubes. Put in a saucepan of cold water and bring to a boil until Potatoes are just tender to the center. Drain.
  2. Meanwhile:   Cut LEEKS and CELERY into 1/4 inch dice. Cut VEGI PICKLES into about 3/8 inch dice.
  3. Squeeze LEMON JUICE. Mix all Dressing Items, including liquid from the Vegi Pickles, in a bowl large enough for the entire recipe.
  4. Tumble Potatoes into the dressing. Season with Salt and Pepper.
  5. When Potatoes have cooled to room temperature, fold in the Mayonnaise.
  6. Refrigerate
  7. When ready to serve, check seasoning and adjust if needed.
  8. Dice more Peppers from the Vegi Pickles for Garnish.
  9. Serve lightly chilled, garnished with a scattering of the Vegi Pickle and some Celery Leaves.
NOTES:
  1. Potatoes:

      Red Bliss and similar work well. You want potatoes that are reasonably absorptive and just slightly crumbly when cooked. For details see our Potatoes page.
  2. Vegi Pickle:

      This is an excellent pickle useful as an antipasto, condiment, etc. It is best after 3 days, but you can use it after 1 day if you have to. See our recipe Vegetable Vinegar Pickle.
