Pasta with Broccoli & Bacon

Pasta with broccoli is very popular in Italy. This very simple but flavorful recipe brings the flavor of bacon to the mix. It will serve 2 as a light main course or 4 as a pasta course.

Prep   (15 min)
  1. Cut BROCCOLI into small florets. If you wish to use tender parts of stems (from about where the branches start on up) they can be cut into lengthwise slivers.
  2. Cut BACON into strips about 1/4 to 3/8 inch wide (narrow for thick bacon, wide for thin) - thick bacon is better.
  3. Crush GARLIC and chop small.
Run   (30 min)
  1. Steam Broccoli Florets until just tender, about 5 minutes. Hold aside.
  2. Heat Olive Oil and fry Bacon until fairly crisp. Keep warm.
  3. Meanwhile: Bring plenty of salted water to a boil and cook Pasta the usual way.
  4. When Pasta is is ready, stir in Broccoli just long enough to heat it through, then drain.
  5. Return Pasta mix to the pot and Stir in Bacon with it's rendered fat, Salt and Pepper.
  6. Serve hot, with grated Parmesan on the side.
NOTES:
  1. Broccoli:

      Weight is for whole heads with short stems, which will yield about 10 ounces of florets. I steam the florets, but you can cook them in the salted pasta water and strain them out before adding the pasta. For details see our Broccoli page.
  2. Pasta:

      The photo example uses farfalle, but small shells, orecchiette or similar will do fine.
