Bacon Sauce for Pasta

Easy to make and delightfully flavorful but best as a pasta course rather than main courses (unless you really love the taste of calories, yum!). Flavor depends on the quality of the bacon.

Bacon, smoked
Onion
Tomatoes, 28oz
Salt
Pepper

Prep   -   (17 min)
  1. Cut BACON into small pieces.
  2. Chop ONION small.
  3. Drain TOMATOES keeping the juice. Chop Tomatoes small and add back to the juice.
Run   -   (30 min)
  1. In a sauté pan fry Bacon over moderate heat until some fat has been rendered. Add Onions and fry stirring over moderate heat until onions threaten to take color.
  2. Stir in Tomatoes. Simmer uncovered until it reaches a proper sauce consistency.
  3. Season to taste with Salt and Pepper.
  4. Serve hot over Pasta of your choice (shown here with linguini).
