Tomato Sauce with Pine Nuts

Raisins and Pine Nuts in this Clalabrian sauce show Arab influence from nearby Sicily, which was under Arab rule for over 250 years. This is a fine and flavorful vegetarian sauce.

Tomatoes
Garlic
Raisins
Pine Nuts (1)
Olive Oil, ExtV
Salt
Pepper

Prep   (30 min - 20 min work)
  1. Set RAISINS soaking in warm water - they'll need at least 1/2 hour.
  2. Drain TOMATOES, keeping the juice. Chop them medium and return to the juice.
  3. Crush GARLIC and chop fine.
  4. Chop soaked Raisins and PINE NUTS, medium. Mix.
Run   (25 min)
  1. Heat Olive Oil and fry Garlic until it is a light golden color, then stir in Tomatoes. Simmer 15 minutes, stirring now and then.
  2. Stir in Raisin mix and simmer another 5 minutes, covered or uncovered as needed to achieve a light sauce consistency.
  3. Stir in Salt and Pepper.
NOTES:
  1. Pine Nuts:

      Pine nuts can most easily be found in markets serving an Italian community, or at Trader Joe's, but also often in markets serving Korean communities. If you don't have them, raw pistachios are the best substitute, with chopped raw cashews next. Almonds don't work well at all.
