Central Asia
Central Asia is a large area variously defined. I will use the common
definition which includes Kazakstan, Uzbekistan, Turkmenistan, Tajikstan,
Kyrgyzstan but also extend it eastward to include the Xinjiang Uyghur region
of China - a non-Chinese region which, like Tibet, has been forceably annexed
by China. The cuisines of this area are basicly those of nomadic hearding
peoples and based on beef, sheep and horse meat and milk.
