Vegies   -   40 min (25 min work) + cool time)
  1. Tip and tail GREEN BEANS and cut crosswise an inch or a little longer.
  2. Peel POTATOES if necessary. Cut in half, quarters, or 3/4 inch chunks (see Potatoes).
  3. Place Green Beans in a saucepan with Salted Water to cover. Bring to boil and simmer just long enough that they are perfectly Crisp Tender. Scoop out and set aside.
  4. Place the Potatoes in a saucepan and add cold water until they are well covered. You can add the water from the Beans as part of this. Bring to a boil and simmer the Potatoes until just tender enough for Salad. Drain well and set aside to cool and dry.
Pesto   -   25 min
  1. Strip PARSLEY LEAVES from stems. Measure is whole leaves moderately packed. Crush GARLIC and chop small. Mix both together with PINE NUTS.
  2. Chop CHIVES fine. Measure is after chopping.
  3. Grate PARMESAN fine.
  4. Squeeze LEMON JUICE.
  5. Place Parsley mix in a Food Processor and run until fine and well combined, scraping down the sides as needed. Then drizzle in Olive Oil with the processor running until you have an even Purée. Transfer to a mixing bowl.
  6. Stir together all Pesto items until evenly distributed.
  7. Tumble Potatoes and Beans with the Pesto until evenly coated. Season with more Salt and Pepper if needed. If refrigerated, give it plenty of time to warm to near near room temperature.
NOTES:
  1. Potatoes

This salad is usually made with tiny Potatoes (thin skinned) just cut in half, or quarters if larger. It can be made with larger potatoes cut to 3/4 inch cubes if tiny ones are not available. For details see our Potatoes page.
  2. Green Beans:

The pattern recipe also allows Asparagus, but it is a bit less forgiving in the cooking, and more expensive.
  3. Pine Nuts:

Raw Pistachios or raw Cashews could also be used.
  4. Comments:

This salad is based on one by Kay Chun, who is Korean, Native to New York, studied cooking in France, and has been a consultant and writer serving all North America.
  5. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove ",in=inch, ar=as required tt=to taste
